Hatch Chile and Backstrap Tacos

Since I've been lazy and unproductive lately, Rick set me up with a couple back straps off this 'ol gal.

So I decided to try my hand at some pulled pork in the crock pot....

A little minced garlic

A half stick of butter, just to be healthy.

Some dry minced onion

I like a bit of cumin

Some italian seasonings

Can of Costco Hatch Chile

Poured over the top

Set crock pot for 10 hours on low

Pulled it apart with some tongs

Finished shredding it up

Let it go for another 10 hours while I was at work today just to really let the juices marinate

At bit more pulling apart and soaking up the juices

Then put aside to drain

Fried up some white corn tortillas and added some cheese........ damn tasty dinner!!!!

Now that the pix loaded, that really looks tasty !! Looks almost like a Chili Verde.

Quick, it was not..... Easy and tasty it was.....

It would have been just fine after the first 10 hours in the crock pot, I'm sure. That's about how long I usually do my pork shoulders when I cook them in the pot. However yesterday morning I was racing out the door, so restarting the slow heat was easier/faster than packing it up for the fridge.

That looks great and a little different than the traditional BBQ style. I'll have to give that a try. Soon as I can kill something.

I gotta say after looking at the ingredients I think your avatar of TP is appropriate. I almost have to drop a deuce just looking at the pile
