Venison Stew


Vegetables get chunked. Season to Taste with the herbs/spices.


01 Parsnip
Splashes: Worcestershire Sauce

01 Turnip
Smoked Chipotle Tabasco

01 Rutabaga
Jalapeno Tabasco

½ lbs. Baby Carrots
01 qt. Beef Stock

01 lbs. Baby Red Potatoes
Garlic Powder

01 White Onion
Thyme/Rosemary

½ lb. Mushrooms
Old Bay Seasoning

Celery
Old Smoked Hickory Salt/Lemon Pepper

02 lbs. Ground Venison
Paprika

01 can Diced Tomato
Olive Oil

¼ lbs. Lentils

1/3 lbs. Pearl Barley


Sauté meat in Olive Oil, herbs, seasonings. Put all ingredients into a pressure cooker and cook for 30 mins. Salt/Pepper to Taste.

NOW I have a plan for that backstrap in the freezer...

However...being from Texas, I’m confused about “chunking” the vegetables. What’s the purpose in throwing them at somebody?

That's 'Chucking', I think
Chunking would seem to imply that one was preparing an oriental dish, Yes/No?

That looks like some good eating right there! A little cornbread on the side- yeah buddy! However a couple of the ingredients, in my humble opinion, would perhaps best be used by throwing them at people. But what do I know ? I’m from Texas too. Hope you enjoyed it Ratdog!

The rutabaga and the parsnip would be left out of mine. Just personal taste.

Ahhh… but, chunked up into small bits and pressure cooked until soft... their flavor doesn't stand out, it soaks in the rest of the other flavors, and is just added fiber that eats like a well cooked carrot. The earthiness of them just adds to the venison's goodness.

Yeah my Mom tried that story too, many years ago. Didn’t work then either.
